TOMATO BRUSCHETTA

INGREDIENTS:

8-10 medium-sized tomatoes

1-2 cloves of garlic

1/4 cup of fresh basil leaves, chopped

3 tablespoons of extra-virgin olive oil

Salt and pepper

1 baguette


INSTRUCTIONS:

Preheat your oven to 400°F (200°C).

Cut the tomatoes into small cubes and put them in a large mixing bowl.

Add the chopped garlic, basil, olive oil, and a pinch of salt and pepper. Mix everything together.

Cut the baguette into 1/2 inch slices and arrange them on a baking sheet.

Toast the bread in the oven for about 5-7 minutes, or until it's golden brown.

Once the bread is done, take it out of the oven and rub each slice with a clove of raw garlic.

Spoon the tomato mixture onto the toasted bread.

Broil the bruschetta for 2-3 minutes, or until the tomato mixture is hot and the bread is crispy.

Serve immediately, enjoy your delicious bruschetta!

You can also add some balsamic glaze, or use some different herbs for variation. If you want to make it more hearty, you can add some diced mozzarella cheese on top before broiling. The possibilities are endless.
